Delicious Diary Free, Gluten Free Pancakes.

Ingredients

200g Gluten free self raising flour

1.5 tsp Gluten free baking powder

1 tbsp honey

300ml almond milk

2 large eggs

Coconut oil for frying

Method

  • Put your gluten free self raising flour, gluten free baking powder into a large mixing bowl and mix together.

  • In a smaller mixing bowl add your eggs, almond milk, honey and beat together throughly.

  • Create a well in your flour bowl and add ingredients, whisk until smooth and consistent.

  • Set your hob on a low medium heat. brush the pan with a light coating of coconut oil.

  • Ladle in your pancake batter I used a 1/4 measuring cup to do this as it is the perfect amount of batter for 1 pancake and ensures they call come out the same size.

  • Allow to cook for 1-2 minute on a low heat.

  • Flip the pancake over for another 30 seconds or so and transfer to a small plate.

Serve up with peanut butter, strawberries, crushed pistachio’s and a drizzle of honey.
